Map 1 Answers:
The colors on this map show changes in elevation--that is, how high the land is above sea level. It based on computer models of that draw information from aerial photos and measurements taken on the land. 

Map 2 Answers:
The colors on this "map" show the kind of vegetation covering the ground. The image is actually a satellite photo taken from space.
